The GAPS protocol is very strict and long-term (the full diet may last 1.5–2 years). It involves the gradual elimination of all grains, pasteurized dairy products, sugar, starchy vegetables, and refined carbohydrates, with a focus on broths, fermented foods, and easily absorbed nutrients.
